Aji Amarillo Yogurt Sauce
A creamy, mildly spicy Peruvian-style sauce — good as a dip or drizzled over roasted potatoes, chicken, or grains.
Ingredients
- 1/2 cup plain Greek yogurt
- 1 to 2 tbsp aji amarillo powder (start with one and adjust for heat)
- 1 tbsp fresh lime juice
- 1 tbsp water or olive oil (helps dissolve and bloom the powder)
- 1 small garlic clove, minced or grated
- 1/4 cup crumbled feta or queso fresco
- Salt and black pepper, to taste
Method
- Whisk the aji amarillo powder, lime juice, and water (or oil) together in a small bowl.
- Let sit for 2 to 3 minutes to allow the powder to hydrate and release its flavor.
- Add the Greek yogurt, garlic, and crumbled cheese.
- Stir vigorously or blend until completely smooth.
